Garden Vegetable Stir-Fry
Colorful medley of organic veggies and tender chicken, lightly seasoned and stir-fried to perfection for a quick and nutritious meal.
ingredients
- 2 tablespoons organic olive oil
- 2 organic bell peppers, sliced (any color)
- 1 organic zucchini, sliced
- 1 organic yellow squash, sliced
- 1 organic onion, thinly sliced
- 2 cloves organic garlic, minced
- 1 cup organic cherry tomatoes, halved
- 2 cups organic spinach or kale, chopped
- Salt and pepper to taste
- Optional toppings: organic tofu or tempeh, organic sesame seeds, organic soy sauce or tamari
steps to follow
- Heat olive oil in a large skillet or wok over medium-high heat. Add sliced bell peppers, zucchini, yellow squash, and onion. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
- Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
- Stir in cherry tomatoes and chopped spinach or kale. Cook for another 2-3 minutes until greens are wilted.
- Season the stir-fry with salt and pepper to taste. Adjust seasoning if needed.
- Serve the organic garden vegetable stir-fry hot as a main dish or alongside cooked grains like organic brown rice or quinoa.
