Garden Vegetable Stir-Fry

ingredients

  • 2 tablespoons organic olive oil
  • 2 organic bell peppers, sliced (any color)
  • 1 organic zucchini, sliced
  • 1 organic yellow squash, sliced
  • 1 organic onion, thinly sliced
  • 2 cloves organic garlic, minced
  • 1 cup organic cherry tomatoes, halved
  • 2 cups organic spinach or kale, chopped
  • Salt and pepper to taste
  • Optional toppings: organic tofu or tempeh, organic sesame seeds, organic soy sauce or tamari

steps to follow

  1. Heat olive oil in a large skillet or wok over medium-high heat. Add sliced bell peppers, zucchini, yellow squash, and onion. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  2. Add minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.
  3. Stir in cherry tomatoes and chopped spinach or kale. Cook for another 2-3 minutes until greens are wilted.
  4. Season the stir-fry with salt and pepper to taste. Adjust seasoning if needed.
  5. Serve the organic garden vegetable stir-fry hot as a main dish or alongside cooked grains like organic brown rice or quinoa.
