Lentil and Vegetable Soup
This soup is not only delicious but packed with fiber, protein, and vitamins, making it a comforting and nutritious meal option.

- 1 cup Organic Brown Lentils
- 4 cups Organic Vegetable Broth
- 1 Organic Onion, diced
- 2 Organic Carrots, diced
- 2 Organic Celery Stalks, diced
- 2 cloves Organic Garlic, minced
- 1 can Organic Diced Tomatoes
- 2 cups Organic Spinach or Kale, chopped
- 1 teaspoon Organic Dried Thyme
- 1 teaspoon Organic Dried Oregano
- Salt and Pepper to taste
- Organic Olive Oil for sautéing
steps to follow
- Rinse the organic brown lentils under cold water and set aside.
- In a large pot, heat a drizzle of organic olive oil over medium heat. Add the diced organic onion, organic carrots, and organic celery. Sauté for 5-7 minutes until vegetables are softened.
- Add the minced organic garlic, organic dried thyme, and organic dried oregano to the pot. Cook for another minute until fragrant.
- Pour in the organic vegetable broth and add the rinsed organic brown lentils. Bring the soup to a boil, then reduce the heat to low and let it simmer for 20-25 minutes until the lentils are tender.
- Stir in the canned organic diced tomatoes (with their juices) and organic chopped spinach or kale. Simmer for an additional 5 minutes until the greens are wilted.
- Season the soup with salt and pepper to taste.
- Serve the organic lentil and vegetable soup hot, garnished with fresh herbs if desired.
